Sourdough Bread

Ingredients

    • 1/4 cup sourdough starter
    • 1 cup whole wheat flour
    • 5 1/2 cups white bread flour
    • 2 1/2 cups water
    • 2 teaspoons salt

Preparation

Put sourdough starter in a bowl. Using a wooded spoon stir in the water, whole wheat flour and salt. Now add the white flour one cup at a time. Once the dough is stiff, place it onto a lightly floured surface and knead for 8 - 10 minutes, until the dough is elastic and springs back when poked. Place dough into a bowl and let it rest for 30 minutes. Place dough into bread pans or baguettes. Cover dough and let rise till double in size this can tack 12 hours. Preheat oven to 375 F. Using a razor blade or a very sharp knife, slash the top of the bread dough. Place the dough into the over and place a pan of hot water on the bottom rack of the oven. Let bake for 45 minutes. Remove from oven and let cool on a wire rack.
