Bob's Turbo Chili

Ingredients

  • 2 t. olive oil
  • 1 large onion- diced
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 2 jalapenos
  • 4-5 cloves garlic- minced
  • 2 lbs. lean ground beef
  • 2 14oz can Italian diced peeled tomatoes
  • 1 14 oz can tomato sauce
  • 1 sm. can tomato paste
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1/2 t. ground red pepper
  • 2 t. paprika
  • 2 T. chili powder
  • 1 t. cumin
  • 1 t. coriander
  • 1 cup green chili salsa
  • 30 oz dark red kidney beans, drained
  • 30 oz black beans, drained
  • salt and pepper, to taste
  • grated sharp Cheddar
  • sour cream (optional)
  • sliced scallion (optional)

Preparation

Ina large soup pot, sauté onions, peppers and garlic in oil until soft. Add ground beef and stir until meat is browned. Add canned tomatoes and seasonings, cover pot, and simmer slowly about 1 hour. Add kidney beans and black beans and cook another 5-10 minutes.

Serve topped with grated cheese, a dollop of sour cream, and scallions. ENJOY!
